They say to be a surgeon you have to have steady hands, I’d rather be a cake artist.

I’m not a cake artist… yet. But I’d like to be one.

I’m Aikko and I’m a banker by day. By night, remove the “n” in banker and you’ll meet my alter ego – Aikko, the baker. Sounds like a superhero? Not.

I started my blog when I was 26, when I found myself taking out lots and lots of chocolate cupcakes from the oven and I realized I wanted to remember that exact moment. Pretty soon the chocolate cupcakes will just be enzymes in friends and family’s stomach but I wanted it to be more than that. So then and there in between swatting off eager hands taking yet too hot cupcakes and mixing a batch of vanilla buttercream, I sat in front my laptop and created Bake Happy. I’m now 27 28, 29, 30 and I still can’t stop baking and blogging.

Some facts about me:

    I live in Makati, Philippines. Proudly Pinoy and a fan of Rizal (just saying…)
    I have a lifelong love affair with sugar and all things sweet. Well… it’s kind of not too obvious in my blog. Don’t you think?
    I love colors but colors don’t love me back. I suck at making color combinations. Wish I have an eye for it. A little help, please?
    I am a self taught baker. I attended a one day beginner’s course on baking at Heny Sison and that’s it. A lot of what you see in my blog are the products of practice, reading baking books, watching people bake/decorate in youtube and visiting other food blogs like mine. Watch out, I might be stalking YOU!
    I love working in series, I have a few ideas up my sleeve and will find time to make them into reality. So visit always, okay?
    Although I love to bake, I can’t stand washing the dishes. Can anyone deliver a dishwasher at our house. The machine kind, of course.
    I’ve baking since I was six. See? That was me sifting my way to a chocolate cake.

    When I was a kid, I used to love the cake batter than the cake itself. I was known to grab the bowl once it’s been emptied of the batter and lick, lick and lick till the bowl looks shiny and new. No chocolate batter in sight. I used to wonder why we have to put the batter in the oven, it tastes way better and looks way more interesting as batter than cake. Of course, I don’t think that way now, silly!

I created Bake Happy to chronicle my baking/decorating adventures and (mostly) misadventures. I hope you find sweet, delightful delicious inspiration from my creations.

I think this write up has gone way too long, I can you see either (1) rolling your eyeballs (2) smiling and shaking your head because you know I’m right or (3) you totally skipped this sentence since you’re already reading my 3 shoutouts, but before I finish, a few shoutouts… just three actually:
