So here’s the thing. If you’ve been following me on Instagram for a while now, you might have noticed that about 6 months ago, I’ve started posting pictures of the fruits (and vegetables) I juice.
I started juicing as a way to stay healthy. At first I ordered my juice from merchants who sell them online, sometimes I still do, but I thought, if I am in it for the long haul, I might as well invest in a juicer. So I bought one online and can I just say it was really worth it? Up to now, our juicer at home is the most used kitchen appliance daily (okay, next to our oven – dear Oven, please don’t get jealous okay, love you.)
And so, my first days of juicing are what I call interesting. I thought you can just process all the fruits and vegetables and leafy greens you can find and the juicer will do it’s thing and make wonderful tasty juice. Unfortunately, I realized juice recipes didn’t work that way. Once I juiced tomatoes and grapes (I know, what was I thinking?!), 2 whole cups of that. Whew! Then there was the other time, I added saluyot to an already green juice. Imagine how slimy the green juice turned out? Ummm, not so appetizing, I know.
Thank heavens now I’ve learned to mix and match fruits and vegetables to come up with interesting flavors. Just like this juice recipe containing beets and pomelo. The pomelo provided a sweet, citrusy taste which complemented the slightly earthy flavor of the beets. Love the ruby red color the juice has too!
- 1 medium sized beets, chopped
- 2 large pomelo, peeled and segmented
- 1/2 cup ice (optional)
- Process pomelo and beets in a juicer.
- Pour into glasses.
- Add ice (optional) and serve.
