Turon Cupcakes

Because it’s the Philippine Independence Day today, for a limited time only, actually, just for this post, I am bringing back the Pinoy Cupcakes Project that actually helped jump start this blog.
The Pinoy Cupcake Project is basically a collection of cupcakes featuring the best of the Filipino Flavors. Want to some of the cupcakes I created? Read on! (but please return to this post, okay?)
These cupcakes are actually called Banana Cupcakes with Jackfruit Creamcheese Frosting. But for me, they are Turon Cupakes. Turon is a Filipino dessert/snack consisting of bananas (saba specifically) rolled into spring rolls and deep fried until golden brown. Some would leave it at that but other variations would add langka/jackfruit embedded within the bananas or some would even roll the turon into sugar before serving. Ahhh… mouthwatering.
Here’s Bake Happy Blogger’s 411 on eating turon:
(1) I was already in college when I was introduced to the version of turon which has langka on it. Wow it was delicious!
(2) I eat turon deconstructed, open the springroll, eat the bananas first then the the springroll last. Yummy!
Turon Cupcakes

1 cup brown sugar
1/2 cup oil
2 eggs
2 cups flour
11/2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup milk
2 teaspoon vanilla extract
1 cup mashed banana — now now now, a word about bananas, as long as you do not see molds, your bananas are still good for baking :)

Here’s how:
(1) Pre-heat oven to 350F
(2) In a big bowl, sift or dry whisk all dry ingredients
(3) In a separate bowl, mix brown sugar and oil until well combined
(4) Add the eggs one at a time.

(5) Add dry ingredients in three batches alternating with 2 batches of milk.

(6) Fold in mashed bananas and add the vanilla extract.
(7) Fill lined cupcake pans two thirds full and bake for 15 to 18 minutes or until done

For the Jackfruit Cream Cheese Frosting, follow the basic cream cheese frosting recipe. Instead of vanilla extract, I used vanilla beans this time.

And for the last step, add in 1/2 cup mashed jackfruit.

    It’s my 2nd time making this. I just noticed that the 2 teaspoons of vanilla extract is not included in the recipe, is that really how it is? Thanks! :)

    hi, i just made this one but my batter is really thick.. is it 1/2 cup oil? cos when i did that .. the sugar just absorb the oil .. or because i used electric mixer? does it really matter? and my cupcakes turned out way too far from what you posted :( they looked liked muffin .. can you tell me what i did wrong :( pleassseeeeee
